Recently at work we had a debate about whether our go to brunch order was sweet or savoury. For everyone else, it was savoury with Eggs Benedict being the most popular, but for me it’s sweet. Pancakes, French Toast, Waffles…your girl is obsessed.
As much as I’d love it, brunch every weekend is just not an option so I regularly end up making pancakes at home, especially when people stay over and not that I’m bragging, but they’re always a big hit.
So, I thought I’d share a recipe that guarantees the best, fluffiest pancakes every time!
- 3 large Eggs.
- 115 grams Flour.
- 1 heaped teaspoon of baking powder.
- 140 ml Milk.
- 1 pinch Salt.
Separate the eggs with the whites in one bowl and yolks in another.
Add the flour, milk and baking powder and mix together to form a smooth, batter.
Whisk together the egg whites with the salt until they form stiff peaks.
Gently fold the egg whites into the batter.
Set a pan on a medium heat and ladle some batter into it.
Allow to cook until the edges start to firm up, the underside is golden and air bubbles appear.
Flip and cook on the other side for a few more minutes until golden.
Stack them up high and add your favourite toppings! My favourites are maple syrup, nutella and banana or a mixed berry compote.
